Yesterday and today...
In the early forties, Ludwig Brümmendorf already conceptualised the
conservation of meat and sausage products by smoking and controlled climatisation.
In order to put these plans and ideas to reality, he founded a company
in 1949 for the production of automatic thermic devices. That is the origin
of the name AUTOTHERM.
In the fifties, mainly cold-smoke chambers and climatised storage rooms
were produced for the storage of salami and ham. The construction of the
chambers developed and therefore chambers with tin or aluminium walls and
an air circulation system were built. For the first time, it was not only
possible to measure the temperature, but also the relative humidity by
the psychrometric method of measurement and regulate temperature and humidity
through a complex system of cooling, heating and humidification.
The quality
of AUTOTHERM products rapidly became popular beyond Germanys borders.
Hot-smoke-chambers were developed in the sixties, in which the cooking
process took place with low-pressure-steam-addition and cold-water-spraying
in order to make work processes faster and more efficient. There was
also intensive work on the development of the steam- smoke-system, which
represented
a totally new quality of smoking.
The seventies were characterised by the optimisation of these processes
in the production of sausages. The first intensive-cooling systems for
cooling cooked and hot-smoked products were made. A tunnel system was
developed in which the smoke-trolleys were transported into a cooling
area after
smoking and cooking in order to be cooled down to packaging temperature.
The electric controls became larger and more complex with rising demands.
As a result, in the eighties, the need for computerised controls arose,
which would make complex program procedures possible. These computers
not only regulate temperature and humidity, but also hydraulic and
pneumatic systems as well as the cooling systems.
The nineties were influenced by environmental technologies. New methods
in the field of emission control were utilised, such as new catalytic
afterburners for cleaning emissions, the reduction of exhaust air and
the use of liquid
smoke.
